I just did a video recipe on putting together the simple, and delicious, chimichanga. A chimichanga is basically a deep-fried burrito, but this home version uses the oven for a much easier and lower-fat variation.
Legend has it that this dish was invented in Tucson, Arizona, when a cook accidentally dropped a burrito into the fryer. Not sure what to call this new dish, the cook simply called it a chimichanga, which translates to "thing-a-ma-jig."

Yes, most people assume its a Mexican recipe.
