The Chicken Chimichanga – This is One Delicious "Thing-a-ma-jig"

PhotoI just did a video recipe on putting together the simple, and delicious, chimichanga. A chimichanga is basically a deep-fried burrito, but this home version uses the oven for a much easier and lower-fat variation.

Legend has it that this dish was invented in Tucson, Arizona, when a cook accidentally dropped a burrito into the fryer. Not sure what to call this new dish, the cook simply called it a chimichanga, which translates to "thing-a-ma-jig."

The great thing about chimichangas is they can be filled with almost anything. After watching the video, I hope you give this fun recipe a try. I'd also love to hear what kind of filling you used, so please let me know. Enjoy!
