Asian Culinary Forum Asks Chefs, "Are You What You Cook?"

The level to which Asian culinary influences are shaping the way America cooks and eats is starting to rival those of the better-known European cuisines. I recently attended a panel discussion called "Are You What You Cook?" - hosted by the Asian Culinary Forum, which featured a group of top Asian-American chefs, including Charles Phan, who's San Francisco restaurant, Slanted Door, is considered one of America's top Asian restaurants.
I've just published an article documenting the discussions, which I hope you'll find as interesting as I did. Many topics regarding Asian cuisine in America were discussed, but the key issue for the chefs was how to strike a balance between keeping customers happy, and maintaining their personal culinary integrity- of staying true to their vision, and challenging guest’s expectations about Asian cuisine.
