chili photo Recently, I did a video demo for YouTube where I used a muffin tin to press and shape some beef sliders. One of the comments said, "When I saw you put the meat into the muffins cups, I was hoping you were making some kind of meat muffins." My first thought was, "that's the silliest thing I've ever heard." My second thought was, "I could go for a nice meat muffin." Off to the lab I went.

A few hours and several adult beverages later, I was starring at a plate of barbecue pork stuffed corn muffins. This new American hybrid - part Chinese pork bun, part corndog - looked good, tasted great, and felt really nice in my hand.

chili photoNot only did the warm muffin just feel right, but I was eating cornbread with barbecue pork and my fingers were spotless! Hundreds of years from now, I believe this will be considered the true genius of the recipe. By the way, I've posted the easy step-by-step recipe so you can make some yourself.

Anyway, I'm asking for your help in naming this recipe. Barbecue pork stuffed corn muffins is a bit wordy, and Memphis meat muffins is just plain disturbing. So, if you have any ideas, I'd love to read your comments. Thanks!

Today's Super Bowl Recipe Exchange

Culinary Arts Guide Danilo Alfaro reminds us that a platter of Super Bowl chicken wings isn't complete without a cool, refreshing dipping sauce like Ranch Dressing or Blue Cheese. And for a real treat, try making them with Homemade Mayonnaise.

Dry Garlic Spareribs In this Montreal specialty, from Chinese Food Guide Rhonda Parkinson, the ribs are boiled until tender, and then simmered in a flavorful sauce with soy sauce, brown sugar, and dry mustard. For extra spice, feel free to add hot red peppers or red pepper flakes to the sauce.

White Chicken Chili is one of those crowd-pleasing recipes that is just ideal for a Super Bowl party. Rotisserie chicken makes this chili a snap to prepare. Fresh tomatillos and cilantro give this chicken chili authentic flavor. Serve with Sweet Cornbread.

The Portuguese chicken burger is my take on Australia's famous Bondi Chicken Burger. It consists of pan-fried chicken breasts topped with a chili sauce, romaine lettuce, several slices of provolone cheese and mayonnaise. I don’t know, it sounds more like a southern punk rock band.

That would be a good name for a Southern punk rock band…
For the muffins, how ’bout “Tennessee John’s BBQ Corn Boys”
That sounds like something on the Cracker Barrel menu – is that what you were going for?

CornHog, second cousin once removed from the CornDog, or for the sophisticated palate, Corn Meal Encrusted, Slow-Roasted, and Smoked Pork Loin

Rachel Ray made some pulled pork sandwhiches called “Pulled Pork Sammies” maybe could call them “Pulled Pork Johnnies”.
