Stuffed Peppers - A Delicious Reason to Make Too Much Rice

 Stuffed Peppers Summer's quickly approaching and soon the markets will be piled high with colorful bell peppers. There are countless ways to enjoy these sweet and nutritious pods, but I think my favorite recipe would be Italian-style stuffed peppers.

Friend of the site, Michelle Fabio from Bleeding Espresso, recently shared this delicious stuffed pepper recipe with me, and it brought back childhood memories of leftover rice. When I was young, I wasn't a huge fan of rice - potato was my starch of choice - but I was always excited to see a bowl of rice on the dinner table since it meant stuffed peppers were soon to follow.

Stuffed bell peppers are a very versatile dish, and you can easily adapt them for whatever you have on hand. All kinds of leftover veggies can be diced and added to the filling, and this recipe will work with just about any type of ground meat. So, make too much rice, and then give these vibrant stuffed vegetables a try!

One of these days I’ll have to share another recipe great for leftover rice: arancini, fried rice balls so named because they supposedly look like small oranges (although most people I know make them to look like big oranges!).

The rice is often combined with peas, sauce, and just a small chunk of mozzarella inside…YUM!!!! Italian street food at its finest!
