Friend of the site, Michelle Fabio from Bleeding Espresso, recently shared this delicious stuffed pepper recipe with me, and it brought back childhood memories of leftover rice. When I was young, I wasn't a huge fan of rice - potato was my starch of choice - but I was always excited to see a bowl of rice on the dinner table since it meant stuffed peppers were soon to follow.
Stuffed bell peppers are a very versatile dish, and you can easily adapt them for whatever you have on hand. All kinds of leftover veggies can be diced and added to the filling, and this recipe will work with just about any type of ground meat. So, make too much rice, and then give these vibrant stuffed vegetables a try!
