Sole Dore - Overcome Your Fear of Cooking Fish

PhotoIf you're afraid to cook fish, this sole Dore recipe is perfect for you. This has to be one of the easiest methods for cooking fish I've ever seen. Even better, this works for any thin, flaky, white fish filets.

The fish is simply dipped in flour and egg, and sautéed in butter. This method will keep the fish moist even if it's cooked a few minutes too long, as well as allow you to keep it warm in the oven without it drying out.

This sole recipe also features a lemon-caper butter sauce, which is quite simple and delicious. With all that barbecued pork you're going to eat over the Memorial Day weekend, the timing is right for this light recipe.
