If you live anywhere on the US mid-Atlantic or northeast coast, you are most likely bracing for the coming of Hurricane Sandy (or with any luck, Tropical Storm Sandy). We are deemed to be right in her path, so amongst many of my hurricane preparedness chores, I made a few batches of soup to sustain us through her onslaught. Fortunately, we have a gas stove, so even with a loss of power, we can heat food up on the stove-top. But you don't need to wait for a hurricane to store up on these hearty homemade soups--they're great to have on hand not matter what the weather report is!
Spiced Chickpea Soup
Rustic White Bean Soup
Lentil Soup with Escarole
Rich Mushroom Bisque
