While I was buying corn at the farmers' market last weekend, I noticed a basket of fresh lima beans on the table where I was paying. They are not the most attractive pods, but they're enticing. I began talking with the farmer about them, and before I knew it, I was buying a bagful of fresh lima bean pods to make succotash with the corn. My memories of succotash are not the best, over cooked canned vegetables in a cream sauce. But this version is simply delicious - you can't really go wrong with corn right off the cob and fresh beans!
