Buttermilk Mashed Yams Recipe

Are looking for a super-easy holiday side dish recipe? Then this low-fat, highly nutritious buttermilk mashed yams recipe is for you. Three simple ingredients combine to make yam magic! You can also use sweet potatoes for a delicious variation.

Makes 8 Portions Buttermilk Mashed Yams

Prep Time: 5 minutes

Cook Time: 25 minutes

Ingredients:

  • 2 lbs yams, peeled and cut in quarters
  • 1 cup buttermilk
  • 1 tsp salt, or to taste

Preparation:

Boil the yams in salted water until just tender. Do not overcook, as the yams will absorb too much water. Drain well, and transfer back to the pot. Add the buttermilk, and salt; mash until smooth. Serve hot. May be made ahead and reheated in the microwave.
