Buttermilk Mashed Potatoes

The tangy, low-fat goodness of buttermilk makes a great mashed potato recipe, without any butter. Despite the name, buttermilk is very low in fat and calories, and allows room for a little sour cream in the recipe. The results are delicious, and healthy, mashed potatoes.

Makes 6 Servings of Buttermilk Mashed Potatoes

Prep Time: 10 minutes

Cook Time: 25 minutes

Ingredients:

  • 6 medium russet potatoes, peeled and quartered
  • 2/3 cup buttermilk, or to taste
  • 1/3 cup sour cream
  • 1/2 teaspoon salt, or to taste
  • fresh ground black pepper, to taste

Preparation:

Put potatoes in a saucepan and cover with salted water. Bring to a boil and cook about 20 minutes, or until tender. Drain very well. Add buttermilk, sour cream, salt and pepper, and mash until fluffy. Taste and adjust seasoning. More buttermilk can be added if less dense mashed potatoes are desired.
