California Coleslaw

This coleslaw is at its best when mixed right before service. It should be crisp and crunchy, and if it sits too long the rice vinegar will soften the vegetables and the coleslaw will go limp. They don't do "limp" salads in California!

Serves 6

INGREDIENTS:

  • 12 oz package of shredded green cabbage (or about 1/2 small green cabbage)
  • 1 red bell pepper, cut into thin strips
  • 1 carrot, peeled and grated
  • 1/2 bunch cilantro, chopped
  • 1/3 cup seasoned rice vinegar
  • 2 tbl mayonnaise
  • 1 tbl red chili sauce (mild or spicy)

PREPARATION:

Add all ingredients in a large bowl, and mix with a fork until combined. Serve immediately!
