Original American Macaroni Salad

No one really knows what was in the “original” American macaroni salad, but I bet this one is pretty close. A great cold pasta salad that’s especially good served with any spicy, barbecued meat. Like most pasta salads, it’s better the next day.

Serves 12

Prep Time: 30 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons mustard
  • 2 tablespoons cider vinegar
  • 1 teaspoons sugar
  • 4 cups dry elbow macaroni, cooked, rinsed in cold water, and drained
  • 1/2 cup diced celery
  • 1/4 cup minced red onion
  • 1/2 cup sweet pickle relish
  • 1/4 cup chopped parsley
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt, or to taste

Preparation:

  1. In a large bowl whisk together the mayonnaise, sour cream, mustard, sugar, and cider vinegar.
  2. Add the macaroni, celery, red onion, pickle relish, parsley, salt, black pepper and stir to combine. Serve well chilled.
