Sweet-Hot Carrot and Cabbage Coleslaw Recipe

This sweet-hot carrot and cabbage coleslaw recipe is simple, crunchy and fresh tasting. A perfect all-purpose coleslaw recipe for any picnic or barbecue.

Makes 8-12 Servings of Sweet-Hot Carrot and Cabbage Coleslaw
Prep Time: 15 minutes
Cook Time: 00 minutes
Ingredients:
  • 1 head green cabbage, cored, sliced thin
  • 4 carrots, peeled, grated
  • 1/2 cup pineapple juice
  • 1/4 cup rice vinegar
  • 1 cup mayonnaise
  • 1 tsp sugar
  • 1/2 tsp cayenne pepper, or to taste
  • salt and fresh ground black pepper to taste
Preparation:
Place the cabbage and carrot in a large mixing bowl. In a smaller bowl, whisk together all the rest of the ingredients. Pour over the cabbage mixture and toss until coated with the dressing. Best if tossed right before serving, as it will stay crisp and crunchy.
