Waldorf Salad with Roast Turkey

This classic Waldorf salad makes a great base for leftover turkey or chicken.

What makes this classic salad so great is the contrast between the sweet fruit, the crunchy nuts, and the slightly tangy dressing. It's great alone, or as a perfect base for leftover turkey or chicken. Be sure to use seedless grapes for this salad! The dash of cayenne is listed as optional, but really wakes up the flavors.

Serves 4

Prep Time: 15 minutes

Cook Time: 00 minutes

Ingredients:

  • 2 cups roast turkey, cubed
  • 2 apples, cubed
  • 1/2 cup chopped walnuts
  • 1 rib celery, chopped
  • 1 cup seedless grapes, halved
  • 1/2 cup raisins or currants
  • 1/2 cup mayonnaise
  • 1/2 lemon, juiced
  • salt and fresh black pepper to taste
  • dash of cayenne pepper (optional)
  • 4 cups torn romaine lettuce

Preparation:

    Combine all the ingredients (except the lettuce) in a bowl and mix with a spatula until combined.

    Divide the lettuce onto 4 chilled plates, and top with the Waldorf salad. Serve immediately.
