Faux Crab and Avocado Salad Sandwich

When budget, or availability makes using real crab difficult, imitation crab is a surprisingly tasty, and low-fat alternative. This crab and avocado salad sandwich is fast to make, and cost a fraction of what the real stuff would have.

Makes 4 Faux Crab and Avocado Salad Sandwiches

Prep Time: 5 minutes

Cook Time: 0 minutes

Ingredients:

  • 8 oz imitation crab, flaked into small pieces
  • 2 ripe Hass avocado, pitted and scooped out, cubed
  • 1 tbsp lemon juice
  • 2 tbsp mayonnaise
  • dash of Tabasco
  • salt and fresh ground black pepper to taste
  • 8 slices toasted bread

Preparation:

Add all the ingredients to a bowl and mix with a spatula until just combine. Serve on toasted bread.
