Ingredients:
- 8 hard-boiled eggs, peeled
- 1 teaspoon white vinegar
- 3 tablespoon mayonnaise
- 1 tbsp softened cream cheese
- 1/2 teaspoon Dijon mustard
- pinch of cayenne
- salt and fresh ground black pepper to taste
- paprika as needed
Preparation:
Cut the eggs in half lengthwise and pop out the yolks into a mixing bowl. Mash them with the vinegar, mayonnaise, cream cheese, mustard, cayenne, salt, and pepper until smooth. If the mixture seems too dry, add a touch more mayo.
Using a spoon, or pastry bag with a star tip, generously fill the holes in the egg white halves with the egg yolk mixture. Sprinkle tops with paprika. Chill well before serving.
