Ingredients:
- 10 hard-boiled eggs, peeled
- 1 teaspoon white vinegar
- 1 tbsp prepared extra-hot horseradish, or to taste
- 1 teaspoon Dijon mustard
- 3 tablespoons mayonnaise
- dash of hot sauce
- salt and fresh ground black pepper to taste
- paprika as needed
- sliced chives, optional
Preparation:
Cut the eggs in half lengthwise and pop out the yolks into a mixing bowl. Mash them with the vinegar, horseradish, mustard, mayonnaise, hot sauce, salt, and pepper until smooth. If the mixture seems dry, add a touch more mayo.
Using a spoon, or pastry bag with a star tip, generously fill the holes in the egg halves with the yolk mixture. Sprinkle tops with paprika and chives. Chill well before serving.
