Creamy Spinach Artichoke Dip

Fresh artichokes can be tricky to work with, but canned artichokes makes this appetizer dip a breeze.

It's not exactly low calorie, but if you're going to make a rich and creamy dip, why not make one that has lots of nutritious spinach and artichokes in it? This is one of the most popular vegetable dips in casual restaurants, and an easy one to make at home.

Makes about 4 cups of Creamy Spinach Artichoke Dip

Prep Time: 5 minutes

Cook Time: 25 minutes

Ingredients:

  • 1 (14 ounce) can artichoke hearts, drained, rinsed, and chopped fine
  • 1/2 (10 ounce) package frozen chopped spinach, thawed, water squeezed out
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1/4 cup grated Parmesan cheese

Preparation:

Preheat oven to 375 degrees F

Mix all ingredients together in a small baking dish. Cover with lid, or foil, and bake for 25 minutes. Serve hot as a dip with vegetables, crackers, or breads.
