Individual Fresh Tomato and Mozzarella Salads

This is such an easy and beautiful cold platter to serve at any summer meal. Tomato and mozzarella salad is a classic combination, and this version features each slice of tomato as its own salad.

Makes 12 Individual Tomato and Mozzarella Salads

Ingredients:

  • 3 large ripe red tomatoes, washed, cored
  • 8 oz log fresh mozzarella, sliced into 12 pieces
  • 12 fresh picked basil leaves
  • 3 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • salt and fresh ground black pepper to taste

Preparation:

Slice each tomato into 4 even slices, and arrange on a serving platter. Season generously with salt and fresh ground black pepper to taste. Top each tomato slice with a piece of cheese, and a basil leaf. In a small bowl, whisk together the oil and vinegar. Dressing can also be done by shaking the oil and vinegar in a jar, or squeeze bottle. Drizzled over the salads before serving.
