Makes 8 Portions of Cider-Braised Beef Brisket

Ingredients:
- 5 pounds beef brisket, trimmed of excess fat
- salt and fresh ground black pepper as needed
- 2 tbsp vegetable oil
- 6 cloves garlic, peeled, crushed
- 1 tbsp dried rosemary
- 3 cups apple cider
- 2 yellow onions, sliced thin
Preparation:
Preheat oven to 325 degrees F.Remove beef brisket from package, and rinse under cold water; dry with paper towels. Season both sides generously with salt and fresh ground black pepper. Place a metal roasting pan (that's at least 4-inches deep) on high heat, when hot add the vegetable oil, and brown the beef brisket well on both sides. Turn off heat and add the rest of the ingredients over the top.
Cover as tightly as possible with foil, crimping around the edges. Place the brisket in the oven, and braise for 3 hours. Remove, and let sit covered for 30 minutes. Carefully remove foil, and transfer the beef to a cutting board. Slice thin, against the grain, and serve in shallow bowls, topped with the onions and braising liquid (taste and adjust the braising liquid for salt and pepper).
