Smoked Salmon Breakfast Pie Recipe

This smoked salmon breakfast pie could be called a lot of things; breakfast casserole, frittata, crust-less quiche, but no matter what you call it, you'll agree this recipe is a deliciously different brunch or breakfast item.

Makes 6 Slices of Red Onion, Caper, and Smoked Salmon Breakfast Pie

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 tablespoon butter
  • 1 red onion, sliced thin
  • 8 large eggs, beaten
  • 2 tbsp whole capers
  • 1/4 cup chopped fresh dill
  • 1 1/2 cups shredded Jack cheese, or other mild cheese
  • 1/2 teaspoon salt, or to taste
  • 1/4 fresh ground black pepper
  • 3 ounce package sliced smoked salmon

Preparation:

Preheat oven to 350 degrees F.

Heat the butter in a frying pan over medium heat. Add the sliced onions and cook, stirring, until the onions soften, about 5 minutes. Remove from heat.

In a large bowl, combine eggs, capers, dill, cheese, salt and pepper. Lightly butter a round 9 1/2-inch pie pan. Add the onions and spread evenly. Scatter half the smoked salmon over the onions. Pour in the egg mixture. Top with the remaining smoked salmon, poking it down lightly so that some of the egg covers it.

Bake about 30 minutes or until eggs have set. Let cool 15 minutes before serving.
