Makes 4 Portions Garlic Chicken

Ingredients:
- 20 cloves garlic, peeled
- 1/4 cup red wine vinegar
- 2/3 cup olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1 large whole chicken, cut into serving pieces
- salt and fresh ground black pepper to taste
Preparation:
Add the first seven ingredients to a blender and puree until smooth; reserve. With a sharp knife, make several slashes in each chicken piece to allow the marinade to penetrate. Place the chicken pieces in a large mixing bowl, and pour over the garlic marinade. Toss to coat thoroughly, being sure to get some of the marinade into the slashes. Transfer to a large sealable plastic bag and refrigerate overnight.Preheat oven to 425 degrees F.
Remove the chicken from the garlic marinade, scraping off any excess. Arrange on a foil-lined baking pan. Season with salt and fresh ground black pepper to taste. Roast for 45 minutes, or until done (internal temperature of at least 165 degrees F).
Transfer to a serving platter, and spoon over any accumulated juices. Best if allowed to rest for a few minutes before service.
