Real Texas Chili

This Texas chili recipe is made with cubes of chuck roast instead of ground beef.

What the difference between a real Texas chili recipe and other chili recipes? According to some, "real" chili recipes use cubed chunks of meat instead of ground beef, and also don't contain beans. Cutting the chuck into cubes gives this chili recipe a more stew-like texture than the more common ground meat recipes.

Makes 10 Portions of Texas Chili

Prep Time: 15 minutes

Cook Time: 1 hour, 30 minutes

Total Time: 1 hour, 45 minutes

Ingredients:

  • 2 tablespoons vegetable oil
  • 3 pounds boneless beef chuck, cut in 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons corn meal
  • 1/4 cup chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 3 cups beef broth
  • 1 cup tomato puree
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne
  • water as needed

Preparation:

  1. In a large pot, over med-high heat, sear the beef in the oil until browned. Do this in batches if necessary. Add the onions to the beef and sauté for 5 minutes. Add the garlic and corn meal, and cook for one minute.

  2. Add all remaining ingredients and bring to a boil, reduce the heat to low and simmer 1 1/2 hours, stirring occasionally. Water can be added during the cooking to adjust for thinner or thicker chili.

Great taste, huge heat, Member achaeronhades

This was a great recipe, however the 1/4 cup chili (hopefully a typo) was just too much. The flavours are fantastic! I went down to 2 cups of broth and made it up with a cup of red wine. Simply amazing. However, the heat generated was a little too much and I could only eat 1 serving... The rest is in the freezer for when I don't mind having what I call a ""Johnny Cash Moment."" Currently making one with a tablespoon of chili powder and adding some smoky paprika and white pepper to boot. All in all, great, but you've gotta have an iron gut to handle the heat.
