Ingredients:
- 1 tbsp vegetable oil
- 1 onion, diced
- 2 1/2 pounds ground turkey
- 4 cloves garlic, minced
- 2 red bell peppers, seeded, diced
- 2 jalapeno peppers, seeded, diced
- 1 can (14.5 ounce) tomato puree
- 1 can (14.5 ounce) diced tomato
- 3 (15 ounce) cans white beans, drained
- 2 cups water
- 1/3 cup chili powder
- 1/4 cup ground cumin
- 1 tsp ground chipotle pepper
- 1 teaspoon black pepper
- 1 1/2 teaspoon salt
Preparation:
In a large pot, over med-high heat, saute the turkey and onions in the oil for 5 minutes, breaking up the turkey into very small pieces with a wooden spoon, or spatula. Add the garlic and cook for one minute. Add all remaining ingredients and simmer one hour before serving. The amount of water can be adjusted for thinner or thicker chili, if desired
