10-Minute Vegetable Chili

You won't miss the meat in this great vegetarian chili recipe. This vegetable chili is healthy, delicious, and super fast to make.

Makes 6 Portions of Vegetable Chili

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 (28 ounce) can diced tomatoes
  • 1 (16 ounce) jar chunky-style salsa
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup diced green zucchini
  • 1 (10 ounce) package frozen corn
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • salt to taste
  • cayenne pepper to taste
  • 1/2 cup cilantro, chopped
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese

Preparation:

Add the tomatoes, salsa, beans, corn, zucchini, cumin, and chili powder into a large saucepan. Bring to simmer on medium-high heat. Reduce heat, cover, and simmer on low for 10 minutes. Taste for salt and pepper. Serve topped with cheese, sour cream, and cilantro.
