Salted Caramel Dark Chocolate Coins

These homemade chocolate candy coins will bring back lots of childhood memories. Remember peeling the shiny foil off after saving them for as long as you could stand? The chocolate coin idea may be for kids, but the flavor combination of dark chocolate, caramel, and sea salt is very grown-up.

Makes about 24 Salted Caramel Dark Chocolate Coins

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 6 oz dark chocolate, chopped
  • 1 tbsp sugar
  • 1/4 cup heavy cream
  • sea salt as needed
  • cocoa for dusting

Preparation:

Add the chopped chocolate to a small metal mixing bowl. Add the sugar to a small dry pan, and place over medium-low heat. The sugar will melt, and eventually turn from a light gold, to a deep dark brown (about 6-7 minutes). DO NOT TOUCH the sugar, as it is extremely hot. Slowly and carefully add the cream, and whisk until all the caramelized sugar is melted. Turn off heat, and quickly pour over the chocolate.

Let sit for a minute and then using spatula stir until the chocolate is melted and a thick smooth mixture is formed. Drop by teaspoon on to a silicon baking mat. Sprinkle each with a few crystals of sea salt. Place a sheet of plastic wrap over the chocolate and use a sheet pan, or other flat object to press the chocolate into thin, flat rounds.

Chill until firm, and then dust with cocoa powder if desired. Store in a cool spot. You can also wrap these chocolate coins in gold foil if desired.
