Contrary to popular belief, rattlesnake tastes more like a very mild fish, or eel, than chicken. Or, as the old joke goes, it tastes like rattlesnake. While you probably don't have rattlesnake in your local grocery store, you can find it frozen from several online sources. It comes cleaned and ready to cook. Rattle sold separately.

- 2 1/2 pounds rattlesnake, cut into 4-inch pieces
- salt and pepper to taste
- 1/2 cup yellow cornmeal
- 1/2 cup bacon drippings, or peanut oil
- Season the rattlesnake with salt and pepper, and roll in the cornmeal to coat well. Let the pieces sit for 10 minutes before frying.
- In a heavy skillet, heat the fat on medium-high heat and fry the rattlesnake until well browned on all sides. This is great served with lemon, tartar sauce, barbecue sauce, or anything you would normally serve with fried seafood.
