Broccoli and Cottage Cheese Casserole

The addition of broccoli and cottage cheese turns an ordinary macaroni and cheese recipe into a deliciously healthy casserole.

Serves 6 Portions of Broccoli and Cottage Cheese Casserole

Prep Time: 15 minutes

Cook Time: 35 minutes

Ingredients:

  • 8 oz dry elbow macaroni
  • 1 head broccoli, cut into 1-inch pieces
  • 12 oz container small curd cottage cheese
  • 8 oz shredded sharp Cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • salt and black pepper to taste
  • 1 cup breadcrumbs
  • 1/4 cup melted butter

Preparation:

  1. Preheat oven to 350 degrees F. Bring a pot of salted water to a boil, add the pasta and cook for 4 minutes. Add the broccoli, and continue cooking until the pasta in just barely tender - do not over cook! Drain very well and add to a 9 x 13 inch baking dish

  2. Stir in the cottage cheese, Cheddar cheese, sour cream, Parmesan cheese, salt and pepper. In a small bowl, stir the breadcrumbs and melted butter together. Sprinkle evenly over the top, and bake for 30 minutes, or until top is golden brown.
