Serves 6 Portions of Broccoli and Cottage Cheese Casserole

Ingredients:
- 8 oz dry elbow macaroni
- 1 head broccoli, cut into 1-inch pieces
- 12 oz container small curd cottage cheese
- 8 oz shredded sharp Cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- salt and black pepper to taste
- 1 cup breadcrumbs
- 1/4 cup melted butter
Preparation:
- Preheat oven to 350 degrees F. Bring a pot of salted water to a boil, add the pasta and cook for 4 minutes. Add the broccoli, and continue cooking until the pasta in just barely tender - do not over cook! Drain very well and add to a 9 x 13 inch baking dish
- Stir in the cottage cheese, Cheddar cheese, sour cream, Parmesan cheese, salt and pepper. In a small bowl, stir the breadcrumbs and melted butter together. Sprinkle evenly over the top, and bake for 30 minutes, or until top is golden brown.
