Cheesy Zucchini Casserole

This cheesy zucchini casserole recipe is very easy to prepare, and makes a great side dish for almost any meal. Next time you need to make a dish for a potluck dinner try this popular vegetable casserole recipe.

Makes 8 Portions of Cheesy Zucchini Casserole

Prep Time: 15 minutes

Cook Time: 60 minutes

Ingredients:

  • 5 slices sandwich bread, cut in 1/2-inch cubes
  • 1/4 cup melted butter
  • 3 cups cubed zucchini (about 1-inch cubes)
  • 1 large onion, diced fine
  • 1 clove garlic, minced fine
  • 1 teaspoon salt
  • pinch of cayenne
  • 1 egg, beaten
  • 2 cups shredded Cheddar cheese

Preparation:

Preheat oven to 350 degrees F.
  1. Place bread cubes in a bowl and pour over the melted butter. Add the zucchini, onion, garlic, salt, cayenne, 1 cup of the cheese, and egg. Mix everything well. Pour the mixture into a buttered 9 x 13 inch baking dish and top with the rest of the cheese.

  2. Bake, covered with foil, for 30 minutes. Remove the foil and bake for another 20 to 30 minutes, until the top is nicely browned.
