Ingredients:
- 8 lamb loin chops
- 2 tbsp olive oil
- 4 cloves minced garlic
- 1 tsp fresh ground black pepper
- 1/4 tsp red pepper flakes
- 1 tbsp fresh chopped rosemary
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 2 tbsp fresh Italian parsley, chopped
- 2 tbsp fresh mint, chopped
- salt as needed
Preparation:
In a large baking dish, toss the lamb with the olive oil, garlic, black pepper, red pepper flakes, rosemary, oregano, and thyme. Once evenly coated, cover and refrigerate for at least 4 hours. Lamb chops may be marinated over night.
Preheat grill, grill pan, or broiler. Remove chops from marinade and salt both sides generously. Cook about 5-6 minutes per side for medium-rare (will vary depending on thickness). Scatter with fresh parsley and mint. Let rest for 5 minutes before serving.
