Mediterranean Loin Lamb Chops Recipe

The Mediterranean-style spice and herb mix is the secret in this succulent lamb chop recipe. After being marinated and grilled, these loin lamb chops are tender, juicy, and flavorful.

Makes 8-10 Grilled Loin Lamb Chops
Prep Time: 10 minutes
Cook Time: 12 minutes
Ingredients:
  • 3 clove minced garlic
  • 2 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp ground coriander
  • 1 tbsp cumin
  • pinch of cayenne
  • 1/4 tsp cinnamon
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 2 lbs (about 8-10) lamb loin chops
  • salt as needed
Preparation:
In a large baking dish, combine all the ingredients, except for the lamb chops and salt. Mix until combined, add the lamb chops and rub the marinade into both sides. Cover and refrigerate for 2 hours, turn over, and refrigerate for 2 hours more. Lamb chops may be marinated over night.

Preheat grill, grill pan, or broiler. Remove chops from marinade and salt both sides generously. Cook about 5-6 minutes per side for medium-rare. Let rest for 5 minutes before serving.

This loin lamb chop recipe is great paired with a spicy orange mint sauce.
