Smoky Barbecue Meatloaf

This barbecue meatloaf recipe uses a smoky sauce, with a pork and beef mixture, for a differently delicious twist on the classic meatloaf.

Makes 8 Portions of Barbecue Meatloaf

Prep Time: 15 minutes

Cook Time: 60 minutes

Ingredients:

  • 2 tbsp unsalted butter
  • 1 onion, finely chopped
  • 1 rib celery, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup finely chopped scallions (green onions)
  • 2 eggs, beaten
  • 1/4 cup milk
  • 1/2 cup smoky barbecue sauce
  • 2 tsp salt
  • 1 1/2 tsp freshly ground black pepper
  • 1 tsp hot sauce
  • 2 tsp Worcestershire sauce
  • 1 1/2 pounds of ground chuck
  • 1 pound ground pork
  • 1 cup plain bread crumbs
  • For the Glaze:
  • 1 tbsp brown sugar
  • 1/3 cup barbecue sauce

Preparation:

Preheat oven to 350 degrees F.
  1. In a large pan cook the onions, garlic, celery, and scallions in the butter, over medium heat, for about 5 minutes, until the onions soften. Remove from heat, mix in the salt, pepper, hot sauce, Worcestershire sauce, barbecue sauce, and milk, and let cool to room temperature.

  2. In a large bowl, combine the meat, vegetable mixture, eggs, and breadcrumbs. Form into a loaf-shape, about 4-inches high, and put into a baking pan. Mix the brown sugar and barbecue sauce in a small bowl and spread evenly over the meatloaf. Bake the meatloaf in oven for 1 hour, or until the internal temperature reaches 170 degrees F. You can cover the meatloaf loosely with foil if the glaze is getting to browned towards the end of the cooking.
Let rest for 15 minutes before serving.
