Makes 8 Portions of Easy Cheesy Salsa Meatloaf

Ingredients:
- 2 pounds lean ground beef
- 2/3 cup chunky-style tomato salsa
- 1 egg, beaten
- 1/3 cup milk
- 3/4 cup bread crumbs
- 1 cup shredded pepper Jack cheese (or regular Monterey Jack)
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp ground cumin
- cayenne to taste
- For the topping:
- 1/4 cup chunky-style tomato salsa
- 1/2 cup shredded pepper Jack cheese (or regular Monterey Jack)
Preparation:
In a large mixing bowl, combine all the ingredients (except for the topping) and mix until just combined. Lightly grease the bottom of a roasting pan with a few drops of vegetable oil. Wet your hands with cold water, and form the meatloaf mixture into a loaf shape, about 6 inches wide, by about 3 to 4 inches high.Spread the 1/3 cup of salsa on the top of the meatloaf, and top with the 1/2 cup cheese. Bake at 325 degrees F., for 1 hour and 15 minutes, or until the internal temperature reaches 160 degrees. Let rest for 10-15 minutes before serving with extra salsa on the side.
