Easy Cheesy Salsa Meatloaf

Many "no-chopping" shortcut meatloaf recipes save time, but fall short on flavor. This easy cheesy salsa meatloaf recipe doesn't have that problem. The chunky salsa adds flavor and moisture to the meatloaf, as well as saves time chopping onions and peppers. The spicy cheese also gives this meatloaf recipe an extra kick.

Makes 8 Portions of Easy Cheesy Salsa Meatloaf

INGREDIENTS:

  • 2 pounds lean ground beef
  • 2/3 cup chunky-style tomato salsa
  • 1 egg, beaten
  • 1/3 cup milk
  • 3/4 cup bread crumbs
  • 1 cup shredded pepper Jack cheese (or regular Monterey Jack)
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground cumin
  • cayenne to taste
  • For the topping:
  • 1/4 cup chunky-style tomato salsa
  • 1/2 cup shredded pepper Jack cheese (or regular Monterey Jack)

PREPARATION:

In a large mixing bowl, combine all the ingredients (except for the topping) and mix until just combined. Lightly grease the bottom of a roasting pan with a few drops of vegetable oil. Wet your hands with cold water, and form the meatloaf mixture into a loaf shape, about 6 inches wide, by about 3 to 4 inches high.

Spread the 1/3 cup of salsa on the top of the meatloaf, and top with the 1/2 cup cheese. Bake at 325 degrees F., for 1 hour and 15 minutes, or until the internal temperature reaches 160 degrees. Let rest for 10-15 minutes before serving with extra salsa on the side.
