Turkey and Cheddar Meatloaf

By John Mitzewich, About.com

This turkey meatloaf recipe calls for cheddar cheese, but would also be great with gouda, or Monterey Jack. Like all successful meatloaf recipes the key is to use a thermometer to check the internal temperature, as the time given is just an estimate, and will vary according to your oven and shape of the loaf pan.

Serves 6

Prep Time: 15 minutes

Cook Time: 60 minutes

Ingredients:

  • 3/4 cup milk
  • 1 cup Italian seasoned breadcrumbs
  • 2 eggs, beaten
  • 1 1/2 teaspoon salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne
  • 1 tbsp Worcestershire sauce
  • 2 pounds ground turkey
  • 1/2 pound cheddar cheese, cut into 1/2-inch cubes
  • 1/2 cup ketchup
  • 2 tbps Dijon mustard
  • 1/2 tsp vegetable oil

Preparation:

  1. Preheat oven to 350 degrees F.[

  2. In a bowl mix the milk, breadcrumbs, eggs, salt, pepper, cayenne, Worcestershire sauce, and half (1/4 cup) of the ketchup. Add the turkey and mix to combine. Fold the cubes of cheese into the mixture and transfer into a lightly oiled loaf pan.

  3. Combine the Dijon mustard and the rest of the ketchup, and spread evenly over the top of the meatloaf.

  4. Bake about 1 hour until it reaches an internal temperature of 170 degrees F. Let rest for 15 minutes before slicing.
