Apricot Glazed Chicken with Fresh Sage

Apricot preserves and fresh sage make a delicious glaze for this easy roast chicken recipe. If you want something a bit different from the usual roast chicken recipes, give this apricot glazed chicken a try.

Makes 4 Portions of Apricot Glazed Chicken

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients:

  • 1 bunch sage
  • 2/3 cup apricot preserves
  • 2 cloves garlic, crushed
  • 1/4 cup olive oil
  • 1 tablespoon cider vinegar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 whole chicken, cut into quarters

Preparation:

Preheat oven to 400 degrees F.
  1. Pick the leaves from the bunch of sage and add to a mixing bowl. Add all the remaining ingredients and stir to combine. Add the chicken and toss, making sure the chicken is evenly coated with the glaze.

  2. Arrange the chicken pieces skin-side up in the pan, spaced evenly apart, in a 13 by 9-inch baking pan. Roast uncovered, until the skin of the chicken is browned and the meat is cooked through, about 40 minutes. Cover loosely with foil during the cooking if the top begins to get too dark.
