No need to buy that artificial green mint jelly when homemade mint sauce is so easy and delicious to make. Also, this lamb chop recipe uses chops cut from the shoulder, which are much less expensive than the lamb chops that come from the loin. But, either will work with this tasty mint sauce.

Ingredients:
- For the Lamb Chops:
- 4 lamb shoulder chops (about 8 oz each)
- 4 sprigs rosemary, roughly chopped
- 4 cloves garlic, sliced
- 2 tbsp pomegranate juice, optional
- 2 tbsp olive oil
- salt and pepper to taste

- For the Sauce:
- 2/3 cup orange jelly or marmalade
- 1 tbsp white wine vinegar
- 1 tbsp water
- 1/2 bunch fresh mint, chopped
- pinch of salt
- 1/4 tsp red pepper flakes, optional
Preparation:
Place the lamb chops, rosemary, garlic, pomegranate juice, olive oil, salt and pepper in a large mixing bowl, and mix until the lamb is evenly coated with the marinade. Transfer into a plastic freezer bag, and refrigerate overnight.
In a small bowl combine all the ingredients for the mint sauce and mix well. Refrigerate until needed.
Remove lamb chops from the bag, and brush of excess marinade. Season with additional salt and pepper if desired. Grill or broil until desired doneness is reached. Serve lamb chops with a spoon of the homemade mint sauce.
