Spicy Lime and Chipotle Chicken Breasts

Chicken breasts are given a quick marinade in lime and chipotle pepper, and then sautéed for a fast and flavorful taste of the Southwest. This lime and chipotle chicken breast recipe is low-cal, and only needs a few ingredients.

Makes 4 Lime and Chipotle Chicken Breasts
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients:
  • 4 boneless skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup orange juice
  • 1 clove garlic, crushed
  • 1 tsp chipotle chili powder (or to taste)
  • 1/2 tsp salt
  • 1 tbsp vegetable oil
Preparation:
Add all the ingredients to a mixing bowl and mix well. Marinate in fridge for 30 minutes.

Remove the chicken from the bowl and reserve the marinade. Pre-heat a non-stick sauté pan on med-high heat. Add the oil and sauté the chicken breasts for 5-7 minutes per side, until almost cooked through. Add the marinade and cook for 2-3 minutes to reduce the sauce. Serve the chicken breasts with the reduced marinade poured over the top.
