This recipe is a slightly modernized version of the very old recipe found on the container of Quaker Oats. This recipe has been around at least since 1891, the year Quaker Oats was formed.

Serves: 8

Prep Time: 20 minutes

Cook Time: 1 hour, 15 minutes

Total Time: 1 hour, 35 minutes

Ingredients:

  • 1 lb ground chuck
  • 1 lb ground round
  • 1/2 cup onions, minced
  • 1 clove garlic, minced
  • 2/3 cup milk
  • 1 egg, beaten
  • 3/4 cup oatmeal
  • 1 tbsp Worcestershire sauce
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1/4 cup ketchup
  • 1 tbl yellow mustard

Preparation:

  1. Pre-heat oven to 325 degrees F.

  2. In a large bowl, mix all the ingredients, except the ketchup and mustard.

  3. Shape into a loaf on baking sheet, about 6-inch wide by 3 high.

  4. Bake for 40 minutes at 325 degrees F., and remove from oven.

  5. Combine ketchup and mustard and spread evenly over meatloaf.

  6. Bake for an additional 15-20 minutes, or until an internal temperature of 160 degrees F.

  7. Let rest for at least 20 minutes before slicing and serving.

This recipe was exactly what I went looking for, except I only used chuck. I adjusted the recipe to accomodate a 5lb roll of chuck, and the results were amazing. With a few minor additions, I was able to get the recipe just the way we like. I make a larger amount most times so I can freeze several for other dinners, however I wasn't able to find my loaf pans, so I improvised with a lasagna pan, and it came out perfect. My additions: Heinz 57 sauce added to ketchup & strained can of Rotini diced tomatoes with green chiles. I added this to mix, and on top for a little zing to the spice. Terrific recipe!
