Peach and Bourbon Glazed Roast Chicken

The fruity sweetness of peach jam makes a great glaze for this roast chicken recipe.

This peach and Bourbon glazed roast chicken recipe is an easy, and very delicious, taste of the south. The peach and Bourbon glaze gives the roast chicken a beautiful, shinny skin. If you're tired of the same old roast chicken recipes give this one a try.

Serves 4

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Ingredients:

  • 1 whole chicken (about 4-pounds)
  • 1/2 cup peach jam
  • 1/4 cup orange juice
  • 2 tablespoons butter
  • 2 tablespoons Bourbon
  • 1 teaspoon Worcestershire sauce
  • 1/8 teaspoon cayenne
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • water as needed

Preparation:

Preheat oven to 375°F.
  1. Combine all the ingredients (except chicken) in a saucepan. Simmer over medium heat, whisking, for 3 minutes. Reserve 1/4 cup of the glaze to serve with the cooked chicken.

  2. Place the chicken on rack in a roasting pan. Add an inch of water into the bottom of the pan. Brush the chicken all over with 1/2 of the remaining glaze. Roast for 45 minutes to an hour, or until the chicken is done. Baste occasionally with the glaze as the chicken roasts. If necessary, add more water to the bottom of the pan to prevent the glaze from burning. Cover with foil towards the end if the glaze is getting too brown.

  3. Remove from the oven and let rest for 15 minutes loosely covered with foil. Cut into quarters and spoon over the reserved glaze before serving.
