Makes 6 Whole Wheat Banana Pancakes

Ingredients:
- 3/4 cup whole wheat flour
- 1/4 cup plain flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 3 tbsp butter, melted
- 1 1/4 cup buttermilk
- 1 large egg, beaten
- 1 ripe banana, mashed
- sliced banana for garnish
- maple syrup
Preparation:
In a mixing bowl, combine the flour, baking powder, baking soda, sugar and cinnamon. In another bowl whisk together the melted butter, egg, buttermilk and banana. Pour the wet ingredients into the dry ingredients and mix with a spatula until just combined.Heat a non-stick skillet over medium heat (spray or wipe with vegetable oil if desired), and ladle portions of batter into the pan. When bubbles form on the surface of each pancake, flip over and cook for another minute, or until lightly browned. Serve topped with sliced banana and maple syrup.
