Makes 8 Gingerbread Pancakes

Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/8 teaspoon ground cloves
- 1 large egg
- 1/4 cup packed brown sugar
- 2 tablespoons vegetable oil
- 1 cup milk
- 1 tablespoons molasses
Preparation:
In a bowl, mix together the flour, cocoa, ginger, cinnamon, baking powder, baking soda, salt, and cloves. Set aside. In another bowl, whisk together eggs, sugar, oil, milk, and molasses. Pour into the dry ingredients, and mix with a spatula until just combined. Do not over mix.Grease a griddle with butter and place over medium heat until hot. Ladle on a 1/4 cup of batter for each cake. Cook until bubbles form on the surface of the pancakes, turn and cook until the other side is lightly browned. Serve hot dusted with powdered sugar.
