Contrary to popular belief, the cross pattern on the top of Irish soda bread is not a religious symbol, but is there to help it bake evenly, and makes it easy to divide the loaves into quarters.
Makes 2 Loaves of Irish Soda Bread

Ingredients:
- 4 cups all-purpose flour
- 1 teaspoon salt
- 2 1/2 teaspoons baking soda
- 2 teaspoons sugar
- 3 cups whole wheat flour
- 2 cups buttermilk
- 1 cup milk
- 1 tablespoon vegetable oil
Preparation:
Preheat oven to 375 degrees F.Sift the all-purpose flour, salt and baking soda into a large mixing bowl. Add the sugar and whole wheat flour, and stir to combine. In another bowl, mix the buttermilk, milk and oil. Add the wet ingredients to the dry ingredients, and mix just until combined. Form 2 round, flat loaves on a greased baking sheet.
With a floured wooden spoon handle, or the side of your hand, make a deep cross-shaped indentation in the top of the loaves, almost down to the pan (see photo). If desired, dust the top lightly with flour for a more rustic look. Bake for 40-45 minutes, until golden brown. Best served slightly warm.
