Chili Spice-Rubbed Pork Chop Recipe

Boneless center-cut pork chops are such an easy cut of meat to work with, and are a great choice in this chili spice-rubbed pork chop recipe. The pork chops are given a lively spice rub, and then pan-seared to give the meat a flavorful crust.

Makes 4 Chili Spice-Rubbed Pork Chops

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp all spice
  • 1 tsp paprika
  • 1 tbsp Ancho chili powder
  • 1/4 tsp cayenne
  • 2 tbsp vegetable oil
  • 4 boneless center-cut pork chops (about 1 1/2-inch thick)

Preparation:

Combine all the spices in a bowl and mix well. Place the pork chops on a plate, and pat dry with a paper towel. Sprinkle half the spice rub on one side of the pork, turn and sprinkle the rest over the other side. Let sit out for 15 minutes before searing.

Place a heavy skillet over med-high heat. When hot, add the oil, and the pork chops (shake off excess spice rub if necessary). Turn the heat down to medium, and cook the pork chops for 7-8 minutes per side for medium. Let the pork chops rest for 5 minutes before serving.

Note: Modern pork is perfectly safe to eat cooked medium, and will be much moister than well done!
