Makes 4 Chili Spice-Rubbed Pork Chops

Cook Time: 15 minutes
Ingredients:
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp all spice
- 1 tsp paprika
- 1 tbsp Ancho chili powder
- 1/4 tsp cayenne
- 2 tbsp vegetable oil
- 4 boneless center-cut pork chops (about 1 1/2-inch thick)
Preparation:
Combine all the spices in a bowl and mix well. Place the pork chops on a plate, and pat dry with a paper towel. Sprinkle half the spice rub on one side of the pork, turn and sprinkle the rest over the other side. Let sit out for 15 minutes before searing.Place a heavy skillet over med-high heat. When hot, add the oil, and the pork chops (shake off excess spice rub if necessary). Turn the heat down to medium, and cook the pork chops for 7-8 minutes per side for medium. Let the pork chops rest for 5 minutes before serving.
Note: Modern pork is perfectly safe to eat cooked medium, and will be much moister than well done!
