Garlic is used three ways in this triple garlic mashed potatoes recipe. Some is boiled with the potatoes, some is sautéed in the butter, and a little is added raw at the end. This three-pronged garlic attack makes for a great mashed potato recipe that will satisfy the most passionate garlic lover.

Makes 8 Portions Triple Garlic Mashed Potatoes

Prep Time: 15 minutes

Cook Time: 35 minutes

Ingredients:

  • 3 pounds Yukon Gold potatoes, peeled and quartered (almost any potato will work)
  • 4 cloves garlic, sliced thin
  • 2 teaspoons salt, divided
  • 4 tablespoons butter
  • 3 cloves garlic, minced fine
  • 1/2 cup milk
  • 1 clove garlic, crushed very fine (with a garlic press, flat of a knife)
  • 1/4 teaspoon white pepper

Preparation:

Put the potatoes and the sliced garlic in a saucepan and cover with cold water. Add 1 tsp of salt and bring to a boil. Reduce heat to medium and cook until the potatoes are tender, but not falling apart. Drain well in a strainer, and reserve.

Put the saucepan back on med-low heat and add the butter and minced garlic. When the garlic starts to sizzle, cook for 1 minute, and turn off heat. Add the drained potatoes, milk, raw garlic, salt, and pepper. Mash until smooth. Serve hot.
