Ingredients:
- 3 pounds Yukon Gold potatoes, peeled and quartered (almost any potato will work)
- 4 cloves garlic, sliced thin
- 2 teaspoons salt, divided
- 4 tablespoons butter
- 3 cloves garlic, minced fine
- 1/2 cup milk
- 1 clove garlic, crushed very fine (with a garlic press, flat of a knife)
- 1/4 teaspoon white pepper
Preparation:
Put the potatoes and the sliced garlic in a saucepan and cover with cold water. Add 1 tsp of salt and bring to a boil. Reduce heat to medium and cook until the potatoes are tender, but not falling apart. Drain well in a strainer, and reserve.
Put the saucepan back on med-low heat and add the butter and minced garlic. When the garlic starts to sizzle, cook for 1 minute, and turn off heat. Add the drained potatoes, milk, raw garlic, salt, and pepper. Mash until smooth. Serve hot.
