Here is a collection of recipes for eating "high on the hog." That expression refers to the fact that cuts of pork considered the most desirable are found along the top of the hog. These more expensive cuts, like the loin and tenderloin, traditionally went to the wealthy, while the less affluent got much tougher cuts from the bottom of the animal.
