Angel Hair Pasta with Broccoli Recipe

As the saying goes, this angel hair pasta with broccoli recipe is "Good, and good for you!" We all should eat more broccoli, and what better way than in a delicious and easy pasta recipe?

Makes 4 Portions of Angel Hair Pasta with Broccoli

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 3 cups chicken stock (or vegetable)
  • 1/2 tsp red pepper flakes
  • 1 1/2 pounds broccoli, florettes cut into 2-inch pieces, stems cut into 1/4-inch cubes
  • 1 box (14-oz) angel hair pasta
  • salt to taste
  • 1/2 cup grated Parmesan cheese

Preparation:

Melt the olive oil and butter in a large pot or saucepan over medium heat. Toss in the garlic, and cook until it beings to sizzle. Add the stock, red pepper flakes, and broccoli stem pieces. Cook at a simmer, for about 10 minutes, or until the stem pieces are almost tender. Add the florettes, and cook for another 5 minutes, or until the tops are tender, but not falling apart. Taste the sauce, and season with salt if desired.

While the broccoli is cooking, bring a pot of salted water to a boil, and cook the angel hair pasta according to directions (did I really have to include that?). Drain, but do not rinse. Toss the cooked angel hair pasta with the sauce and Parmesan cheese in a serving bowl. Serve hot.
