Makes 4 Portions of Angel Hair Pasta with Broccoli

Cook Time: 20 minutes
Ingredients:
- 2 tbsp olive oil
- 2 tbsp butter
- 4 cloves garlic, minced
- 3 cups chicken stock (or vegetable)
- 1/2 tsp red pepper flakes
- 1 1/2 pounds broccoli, florettes cut into 2-inch pieces, stems cut into 1/4-inch cubes
- 1 box (14-oz) angel hair pasta
- salt to taste
- 1/2 cup grated Parmesan cheese
Preparation:
Melt the olive oil and butter in a large pot or saucepan over medium heat. Toss in the garlic, and cook until it beings to sizzle. Add the stock, red pepper flakes, and broccoli stem pieces. Cook at a simmer, for about 10 minutes, or until the stem pieces are almost tender. Add the florettes, and cook for another 5 minutes, or until the tops are tender, but not falling apart. Taste the sauce, and season with salt if desired.While the broccoli is cooking, bring a pot of salted water to a boil, and cook the angel hair pasta according to directions (did I really have to include that?). Drain, but do not rinse. Toss the cooked angel hair pasta with the sauce and Parmesan cheese in a serving bowl. Serve hot.
