Tortellini with Gorgonzola Sauce

Italy's famous Gorgonzola blue cheese makes an incredibly delicious pasta sauce. This is an easy and relatively light version of this classic cheese sauce, and is perfect for getting into all the tortellini's nooks and crannies.

Makes 4 Portions of Tortellini with Gorgonzola Sauce

Prep Time: 5 minutes

Cook Time: 10 minutes

Ingredients:

  • 8 oz Gorgonzola cheese
  • 1 package (12 oz) dry tortellini (cheese or spinach)
  • 2 cups cream
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp fresh ground black pepper
  • 1/4 cup chopped parsley
  • salt to taste

Preparation:

Using two forks, mash up the Gorgonzola into small pieces on a plate and reserve. While the sauce in the next step is being made, boil the tortellini according to the directions on the package. Drain, but do not rinse.

Pour the cream in a saucepan and bring up to a simmer on medium heat. Be sure to watch because it will boil over! Simmer (just below a full boil) for about 5 minutes. That's going to reduce the cream slightly. After the 5 minutes, turn off the heat, add the Gorgonzola, and whisk it in until melted.

Stir in the Parmesan cheese, black pepper, and fresh parsley. Toss the tortellini and hot sauce together in a serving dish. Taste and add salt if needed. Serve hot.
