Makes 8 Portions Brown Rice, Lentil, and Pumpkin Seed Salad

Prep Time: 10 minutes

Cook Time: 0 minutes

Ingredients:

  • 2 cups cooked lentils
  • 2 cups cooked brown rice
  • 2/3 cup raw shelled pumpkin seeds
  • 1 tbsp Dijon mustard
  • 1/3 cup rice vinegar
  • 1/3 cup olive oil
  • 1/4 cup chopped fresh parsley
  • salt and fresh ground black pepper to taste

Preparation:

Toss all ingredients in a mixing bowl until thoroughly combined. Cover and chill for one hour before serving.
