Mediterranean Tuna Spaghetti Recipe

This Mediterranean tuna spaghetti recipe features a quick tomato sauce that bursts with flavor. Tuna really makes a healthy, and meaty tasting sauce recipe that can be used on spaghetti, linguine, or fettuccini.

Serves 4 Portions of Mediterranean Tuna Spaghetti

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 tablespoons olive oil
  • 3 cloves minced garlic
  • 2 tablespoons capers
  • 1/2 cup white wine
  • red pepper flakes, to taste
  • 1 anchovy fillet (or 1 teaspoon anchovy paste)
  • 1 can (7 ounces) tuna
  • 3 cups tomato sauce
  • 1 teaspoon sugar
  • 1/2 cup chopped parsley
  • 1 pound spaghetti

Preparation:

Add the olive oil, garlic, and capers to a large saucepan, and turn on the heat to medium. When the garlic begins to sizzle, and before it starts to brown, add the wine. Cook until the wine reduces by about half.

Stir in the red pepper, anchovy, tuna, tomato sauce, sugar, and parsley. Bring to a simmer, and turn heat to low. Stir occasionally, while the pasta cooks. Boil the spaghetti according to the directions on the package. Drain, but do not rinse.

Add the spaghetti back to the pot in which it was cooked, and pour over the tuna sauce. Toss with tongs to coat the pasta with the sauce. Cover and let sit for 3 minutes to absorb the sauce. Serve hot.
