Feta, Red Onion, and Tomato Salad Recipe

When tomatoes are in season, there's nothing like a fresh and colorful feta, red onion, and tomato salad. The simple balsamic dressing really brings out the sweetness of the tomatoes, as well as balancing the tangy feta in this great summer salad.

Serves 12 Portions of Feta, Red Onion, and Tomato Salad

Prep Time: 15 minutes

Cook Time: 00 minutes

Ingredients:

  • 1/3 cup extra virgin olive oil
  • 1/3 cup balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, crushed and minced
  • 6 large ripe tomatoes, sliced into rounds
  • salt and freshly ground black pepper to taste
  • 1 red onion, halved and sliced very thinly
  • 4 oz feta cheese, crumbled
  • 1 bunch fresh basil, chopped

Preparation:

In a bowl whisk together the oil, vinegar, Dijon, and garlic. Arrange the tomato slices on a large platter. Season generously with salt and fresh ground black pepper. Top with onion, cheese and basil. Whisk dressing again, and drizzle over the tomato salad. Top with more fresh ground black pepper if desired.
