Makes about 1 1/2 cups

Ingredients:
- 1 tbsp grated orange rind
- 1/2 tbsp grated lemon rind
- 1 cup red currant jelly
- 1/3 cup California cabernet wine
- 1/2 cup orange juice
- 2 tbsp lemon juice
- 1 tbsp brown sugar
- 1/4 tsp dry mustard
- 1 pinch cayenne pepper
- 1 pinch ground ginger
- salt and freshly ground black pepper
Preparation:
- Combine all the ingredients, except the salt and black pepper, in a sauce pan and bring to a simmer over medium heat. Reduce to low and simmer for 15 minutes, stirring occasionally. Remove from heat and allow to cool. Sauce will thicken as it cools.
- Once cooled season with salt and freshly ground black pepper to taste. Serve chilled, or reheat and serve hot if desired.
