California Cumberland Sauce

Delicious red currant jelly is the main ingredient in Cumberland sauce.

Cumberland sauce is a wonderfully flavorful condiment for the turkey, ham, and roast goose that are traditionally served around the holidays. Not only does Cumberland sauce taste great, it's also so simple to make it's perfect for that hectic holiday schedule.

Makes about 1 1/2 cups
Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:
  • 1 tbsp grated orange rind
  • 1/2 tbsp grated lemon rind
  • 1 cup red currant jelly
  • 1/3 cup California cabernet wine
  • 1/2 cup orange juice
  • 2 tbsp lemon juice
  • 1 tbsp brown sugar
  • 1/4 tsp dry mustard
  • 1 pinch cayenne pepper
  • 1 pinch ground ginger
  • salt and freshly ground black pepper
Preparation:
  1. Combine all the ingredients, except the salt and black pepper, in a sauce pan and bring to a simmer over medium heat. Reduce to low and simmer for 15 minutes, stirring occasionally. Remove from heat and allow to cool. Sauce will thicken as it cools.

  2. Once cooled season with salt and freshly ground black pepper to taste. Serve chilled, or reheat and serve hot if desired.
